So what programs should I uninstall on my vista?

Depends on what your machine is. Almost all new machines are loaded with bloatware that can and should be removed if you aren't going to use it. But be VERY careful about uninstalling actual Vista components. Even if they seem to be frivolous, you can cause yourself some serious problems.

First thing to do, in my opinion, is to set up the hidden admin account through command prompt before you try to remove anything. Vista is sneaky and tyrannical about permissions and letting you change things about your machine. Even when your user account is labeled "admin", there is a hidden default that doesn't allow you constant administrative access. Sucks a fat one, it's annoying as hell.

It's quick to run and it gets rid of some stuff that's useless.
Make sure you go over the list though, you may want to keep some stuff.

And I think you meant disabling services and stuff when you said main files uninstalled?

You can hack away some of the core components, but I don't think there's a guide for that. You need to re-install from a lite-install disc created by you via v-lite or by downloading an image. It's probably more hassle than it's worth this way though.

or you could just do a clean install and install the drivers yourself. no bloatware . that's what i did .
